I was aimlessly scrolling social, Instagram to be exact, when I came across this recipe posted by themarysarge. Her page is full of cooking inspo. I feel like I was in the right place at the right time, because this recipe is everything. I’ve been fighting a cold for the last two weeks, on and off, so soup is exactly what I need.

I have to reiterate that this recipe is not mine, but I do want to share my review of it.

So let’s start with the ingredients:

– 1 sweet onion, diced
– 1 jalapeño, diced
– 12 cloves garlic, minced
– 1 lb boneless chicken
– 3 cups chicken broth
– 3 cups enchilada sauce
– 1 can green chiles
– 1 can corn, drained
– 1 can black beans, drained and rinsed
– 1 tbsp cumin
– 1 taco seasoning packet
– Salt and pepper to taste
– 2 cups brown rice, cooked
– the juice of one lime

Cooking instructions:

– Add all to crockpot except the rice and lime juice
– Set the crock pot to cook on high for 4-5 hours.

– Shred your chicken, add in the rice and lime juice and then garnish with your favorite toppings!

I followed the instructions for the most part, however I left the rice separate from the soup so that way we could store them separately and add as much or as little rice as we wanted.

For toppings, I used sour cream, Siete brand nacho chips and avocado salsa. I recommend using actual avocado, how it was pictured in her post. I just didn’t have any fresh avocado on hand.

When I make this next time, I might leave out the jalapeño. It is a little spicy so my daughter wouldn’t eat it. I would probably garnish with jalapeño next time to adjust the heat.

You definitely need to try this recipe. In Florida we’re experiencing “winter” this week and the soup has been warming me up. It’s perfect for this time of year. Chicken enchiladas are one of my favorite dishes to eat, and in soup form, it doesn’t disappoint. You can customize a lot without ruining the recipe as well.
